Vanuatu, Malekula Island cacao beans

These Vanuatu cocoa beans are sourced from the island of Malekula, one of the largest islands in Vanuatu by Luke Spencer from Spencer cacao.

Luke deals directly with over 20 families that grow and process cocoa predominantly on the west coast of Malekula.
Cocoa has been grown in this region for over 50 years, utilising hybrids such as Trinitario and also Forastero (Amelonado) cocoa stock imported from PNG.
Crops yield approximately 300-500kg dry bean per hectare depending on the soil type and grower inputs, mainly pruning and slashing weeds/ grasses. All the cocoa is growing using organic principles, and no chemicals or fertilisers are used.
Fermentation is 6 days reaching 45-50oC in wood boxes 1m3. Turning every 2nd day. Cut test are performed to check full fermentation.
Drying is sun dryed only using solar dryers or direct sun method. We do not use hot air (wood fire) pipes.
Bean size is small at approx 110-115 count per 100g.
